Back in 1962, Roland LeFebvre started smoking and curing Vermont farmers’ meats with found materials, from maple shavings and corncobs. Fast-forward 50 years, when a former farmer and entrepreneur Chris Bailey stumbled upon his shop and transformed it into a quickly growing national brand. Vermont Smoke and Cure still smokes its meats primarily with maple shavings and corncobs and cures them without sodium nitrites.
