Ingredients

  • JOES SPECIAL
  • 3 ounces fresh button mushrooms
  • 4 eggs
  • 3 ounces ground beef
  • 2 ounces fresh spinach
  • SMOOTHIE
  • 3 ounces collard greens
  • 10 ounces frozen pineapple
  • 1 cup almond milk
  • 2 teaspoons maple syrup
  • ½ teaspoon cardamon
  • 3 ounces fresh button mushrooms
  • 4 eggs
  • 3 ounces ground beef
  • 2 ounces fresh spinach
  • SMOOTHIE
  • 3 ounces collard greens
  • 10 ounces frozen pineapple
  • 1 cup almond milk
  • 2 teaspoons maple syrup
  • ½ teaspoon cardamon

Prep the Scramble

  • Slice the mushrooms.
  • In a mixing bowl, beat the eggs until blended. Season with salt and pepper.

Cook the beef and the eggs

In a frying pan over medium-high heat, warm 1 tablespoons oil or butter (if using) until hot but not smoking. Add the beef and break into small chunks with a wooden spoon. Season with salt and pepper and cook, stirring occasionally, until the beef is browned and cooked through, 4 to 6 minutes.
Reduce the heat to medium, add the mushrooms, and season with salt and pepper. Cook, stirring occasionally, until the mushrooms are browned and most of the liquid has evaporated, 2 to 4 minutes. Add the spinach and cook until just wilted, 1 to 2 minutes. Add the eggs and cook, stirring, until the eggs are set but still moist, 2 to 3 minutes.

Serve

Transfer to individual plates and serve.

Prep and blend the smoothie

  • Wash the collard greens and coarsely chop the leaves.
In a blender, combine all the ingredients with 1 cup ice and blend until smooth.

Serve

Pour the smoothie into glasses and serve.
