Andouille Pork Sausage Pinwheels

Smoky, slightly spicy andouille sausage gives gumbo its signature flavor, but these pinwheels are a grill master’s delight. Run two skewers perpendicularly through the center, and grill over medium heat for 3 to 4 minutes per side, or until done. Or for a hearty breakfast, make a spicy hash with potatoes, peppers, and onions and top with an egg.
