Andouille Pork Sausage Pinwheels

Smoky, slightly spicy andouille sausage gives gumbo its signature flavor, but these pinwheels are a grill master’s delight. Run two skewers perpendicularly through the center, and grill over medium heat for 3 to 4 minutes per side, or until done. Or for a hearty breakfast, make a spicy hash with potatoes, peppers, and onions and top with an egg.

Keep refrigerated. Previously Frozen. Best if used within 5 days of receipt.

Instructions

Stovetop

Pat the sausage dry with a paper towel; prick in a few places with a fork, if desired.

In a large frying pan over medium heat, warm 1 to 2 teaspoons oil until hot but not smoking. Add the sausage and cook, turning once, until browned and cooked through, 2 to 3 minutes per side. Remove the skewers.

Grill

Prepare a medium-hot fire in a grill. Set the sausages on the grill directly over the heat and cook, turning occasionally, until the skin is blistered and the sausages are cooked through, 3 to 4 minutes per side.
