Choose your cooking method

Stovetop

  • Pat the chicken dry with a paper towel; season generously with salt and pepper.
In a large frying pan over medium heat, warm 1 to 2 tablespoons oil until hot but not smoking. Working in batches if needed, add the chicken and cook, turning frequently, until browned and cooked through, 6 to 8 minutes.

Oven
Heat the oven to 450°F.
  • Pat the chicken dry with a paper towel; season generously with salt and pepper.
Line a sheet pan with foil and brush the foil lightly with oil. Place the chicken on the prepared sheet pan. Roast, turning once halfway through, until the skin is crisp and the chicken is cooked through, 20 to 25 minutes.

Grill
  • Pat the chicken dry with a paper towel; season generously with salt and pepper.
Prepare a medium-hot fire on one side of a grill. Set the chicken on the grill directly over the heat and cook, turning frequently, until starting to brown, about 5 minutes. Transfer to indirect heat, close the grill, and cook, turning a few times, until lightly charred and cooked through, 20 to 25 minutes longer.
