Choose your cooking method

Stovetop

  • Pat the fish dry with a paper towel; season generously with salt and pepper.
In a large frying pan over medium-high heat, warm 1 to 2 tablespoons oil until hot but not smoking. Add the fish, reduce the heat to medium, and cook, turning once, until the fish is cooked through, 3 to 5 minutes per side.

Grill
  • Pat the fish dry with a paper towel; season generously with salt and pepper.
Prepare a medium-hot fire in a grill. Place the trout, skin side down, in a grilling basket, on a cedar plank, or directly on the grill over the heat and cook, turning occasionally, until opaque and flaky and the skin is crisp, 5 to 7 minutes.
