Prep and cook the steak
Heat the oven to 350°F.
- Pat the thawed steak dry with a paper towel; season generously with salt and pepper.
In a large oven-proof frying pan over medium-high heat, warm 1 to 2 tablespoons oil until hot but not smoking. Add the steak and cook, turning once, until well browned, about 3 to 4 minutes per side. Then transfer the pan to the oven and roast the steak, turning halfway through, until cooked to your desired doneness, about 10 to 15 minutes total for medium-rare.
Transfer the cooked steak to a cutting board to rest for 5 minutes before slicing.
