In this whole-grain, plant-based take on Creole dirty rice, we mix barley and wheat berries with roasted corn and green peppers and top everything with a bright and zingy sauce.

We delivered this meal fresh because it tastes best that way (heated of course!). If you need to freeze it to cook later, no worries, that works too.
Microwave: Cook in the tray for 3 minutes (7 if frozen). Remove plastic. As needed continue to cook 1 minute at a time until internal temperature reaches 165°F*.
Oven: Remove plastic, cover tray with foil, and bake at 425°F for 20 minutes (40 if frozen). As needed continue cooking covered until internal temperature reaches 165°F*.
