  • 2 blood oranges
  • ¼ cup
  • plus 1 tablespoon coconut sugar
  • 12 slices gluten-free sandwich bread
  • 3 eggs
  • 1/4 cup hemp milk
  • 1 pinch kosher salt
  • ½ teaspoon vanilla extract
  • 1 tablespoon coconut oil

Make the syrup

  • Zest and juice the oranges.
In a sauce pot over high heat, combine 2 tablespoons water, 1/4 cup coconut sugar, and half the blood orange zest and all but 2 tablespoons of the blood orange juice. Bring to a boil, reduce to a low simmer, and cook until the sugar has dissolved and the liquid has reduced to a syrup, 8 to 10 minutes.

Make the French toast

  • Cut the bread into ½-inch-thick slices.
In a large bowl, whisk together the eggs, milk, the remaining blood orange zest, 2 tablespoons blood orange juice, 1 tablespoon of the coconut sugar, salt, and vanilla. Soak 2 to 3 slices of bread at a time in the egg mixture.
In a frying pan over medium-high heat, warm ¼ cup coconut oil until hot but not smoking. Add the bread and cook until well browned and the egg is set, 2 to 3 minutes per side.

Serve

Transfer the French toast to individual plates and serve with blood orange syrup.
