For the grain in this bowl we’re loving freekeh, a kind of young wheat that’s been roasted to bring out a smoky, nutty flavor. It’s rich in manganese (good for healthy bones) and makes a nice hearty base for this saucy lamb ragout.
- Lamb ragout (ground antibiotic-free lamb - diced fire-roasted tomatoes - bell pepper - white beans - Sunbasket beef stock - onions - arrowroot powder - extra virgin olive oil - granulated garlic - kosher salt - dried thyme - dried oregano - black pepper - red chile flakes)
- Cooked freekeh (water - freekeh - kosher salt)
- Lemon yogurt sauce (Sunbasket vegetable stock - white beans - tahini - yogurt powder - lemon juice - minced parsley - arrowroot powder - pureed garlic - lemon zest - cumin - black pepper - dried dill)
