Make the tzatziki

  • Peel the cucumber if desired; cut the cucumber into enough ¼-inch pieces to measure ¼ cup [½ cup].
  • Strip the mint leaves from the stems; coarsely tear or chop the leaves. Set aside half for garnish.

In a small bowl, stir together the yogurt, cucumber, and half the mint. Season to taste with salt and pepper. Let stand while you prepare the rest of the meal.

Make and cook the köfte

  • Cut a small corner from your protein packaging and drain off any excess liquid. Transfer to a plate; pat dry with a paper towel.  

In a medium bowl, combine your protein and the Mediterranean spice blend, season generously with salt and pepper, and mix gently until just combined. Using wet hands, form the mixture into 4 [8] ovals.

In a large frying pan over medium heat, warm 1 tablespoon [2 TBL] oil until hot but not smoking. Add the köfte and cook, turning occasionally, until browned and cooked through, 4 to 6 minutes for lamb, 4 to 5 minutes for Impossible Burger. Transfer to a plate.

While the köfte are cooking, prepare the tomato relish and warm the pita breads.

Make the tomato relish

  • Cut the tomatoes into quarters.
In a small bowl, stir together the tomatoes, 1 teaspoon [2 tsp] oil, and as much sambal oelek as you like. Season to taste with salt and pepper.

Warm the pita breads

  • Gently pull apart the pita breads to form 4 [8] thin rounds.

In a dry medium frying pan over medium heat, warm one pita round at a time, turning once, until lightly toasted, about 30 seconds per side. Alternatively, toast them in a toaster oven. 

Serve

Transfer 2 pitas to each individual plate and top with the köfte. Garnish with the tzatziki and tomato relish. Sprinkle with the sumac and remaining mint and serve.
