  • 1/4 cup coconut oil melted
  • 1 cup coconut sugar
  • 1 egg white
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups finely ground almond meal
  • 1 ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • ½ cup dairy-free chocolate chips
  • ½ cup chopped walnuts

Make the batter

In a large bowl, beat the melted coconut oil and the coconut sugar. Add the egg white and vanilla extract and beat until well combined. In another bowl, mix together the almond meal, baking powder, cinnamon, ginger and salt. Fold the dry ingredients into the wet ones until combined. and then stir in the chocolate chips and walnuts.

Cook the cookies

Line a crockpot with parchment paper and rub with coconut oil. Transfer the dough to the crock pot and press down evenly. Cook on low until the outside of the cookies appear golden brown, and the inside is still soft, 2 to 2 ½ hours.

Serve

Carefully use the parchment paper to gently lift the bars out of the crock pot and transfer to a rack to cool completely. Cut into squares and serve.
