Paleo flourless chocolate cake

  • 2 tablespoons coconut oil
  • melted
  • 1 cup dairy-free dark chocolate chips
  • ½ cup hemp milk
  • ½ cup coconut sugar - plus 3 tablespoons
  • 4 egg yolks
  • 6 egg whites



Make the batter

Heat the oven to 350°F.
  • Butter a 1 cup ramekin.
In a sauce pot over low heat, add the chocolate chips, milk, and ½ cup sugar. Cook, stirring, until the chocolate melts, 8 to 10 minutes. Immediately remove from the heat and let cool, about 5 minutes. Whisk in the egg yolks. In a mixing bowl, beat the egg whites until soft peaks form. Add the remaining 3 tablespoons sugar and whisk until stiff but not dry.
Gently fold the egg whites into the chocolate mixture.


Bake the cakes

Pour the batter into the ramekins and bake until the cakes nearly double in size, 20 to 25 minutes.



Remove from the oven, let cool and serve alone or with whipped coconut cream, powdered coconut sugar, and fruit.
