  • ½ cup freshly grated Parmesan
  • 2 garlic cloves
  • ½ cup extra virgin olive oil

Prep the ingredients

  • Strip the basil leaves from the stems. Coarsely chop the leaves.
  • Coarsely chop the garlic.

Make the pistou

In a food processor, combine the basil, garlic, and Parmesan until combined. With the motor running, add the olive oil in a steady stream until to make a coarse purée. Add the salt and pulse to combine. Taste add more salt if desired.

Serve

Transfer the pistou to air tight container and press a sheet of plastic wrap directly on to the surface. Seal with an airtight lid and refrigerate for up to 3 days or freeze for as long as three months.
