Prep and cook the scramble

  • If using, finely chop the chipotle.
  • Crack the eggs into a medium bowl; season with salt and pepper and lightly beat.
  • Coarsely chop the cilantro.
In a medium pan over medium heat, warm 1 tablespoon oil. Add the tomatoes, green chiles, spice blend, and as much chipotle as you like; season with salt and pepper and cook until thickened, 1 to 2 minutes. Add the eggs and half the cilantro. Cook, stirring, until the eggs are set, 2 to 3 minutes.

Warm the tortillas

If using the tortillas, on the stovetop directly over a flame, or in a dry pan over medium heat, warm the tortillas until just pliable, 30 seconds per side.

Serve

Transfer the eggs to individual plates; garnish with the remaining cilantro. Serve with the tortillas, if desired (for a more paleo-friendly version, omit them).

Prepare the smoothies

  • Peel the oranges. Cut them in half crosswise, then separate into segments. Discard any seeds.
In a blender, combine the oranges, almonds, almond milk, vanilla-maple blend, and 1 cup ice. Season lightly with salt and blend until smooth.

Serve

Pour the mixture into glasses and serve.
