Wash produce before use

Toast the ciabatta

Heat the oven to 400°F.
  • Cut the ciabatta in half horizontally; drizzle or brush the cut sides with 1 to 2 teaspoons oil and season with salt.
On a sheet pan, place the ciabatta, cut sides up, and toast in the oven until lightly browned and starting to crisp around the edges, 6 to 8 minutes. Meanwhile, prepare the pizza topping.

Cook the pizza topping

  • Peel and thinly slice enough onion to measure ¼ cup [½ cup] and set aside for the salad; coarsely chop enough of the remaining onion to measure ½ cup [1 cup] for the pizza topping.
  • Cut a small corner from the ground turkey packaging and drain off any excess liquid. Transfer to a plate; pat dry with a paper towel.
In a large frying pan over medium-high heat, warm 1 tablespoon [2 TBL] oil until hot but not smoking. Add the coarsely chopped onion and cook, stirring occasionally, until starting to soften, 2 to 3 minutes. Add the turkey, season generously with salt and pepper and the sausage seasoning, and cook, stirring to break up the meat, until browned and cooked through, 5 to 7 minutes. Stir in the herbed marinara and ¼ cup [½ cup] water and cook until heated through, 1 to 2 minutes. Remove from the heat and season to taste with salt and pepper.

Finish the pizza bread

Carefully remove the ciabatta from the oven. Spoon the pizza topping over the ciabatta halves, leaving a ½-inch border around the edges, and sprinkle evenly with the Italian cheese blend. Return to the oven and bake until the cheese is lightly browned and bubbling, 7 to 9 minutes. Meanwhile, prepare the salad.

Make the salad

  • Cut the olives in half, checking for any pits.
In a large bowl, stir together the red wine vinegar and 1 tablespoon [2 TBL] oil. Add the mixed greens, thinly sliced onion, and olives and toss to combine. Season to taste with salt and pepper.

Serve

Transfer the pizza bread and salad to individual plates and serve.
