Green beans with pancetta-walnut crumble and honey-lemon glaze

Roll over green bean casserole, a lighter, brighter take on that beloved holiday side is in town.

Ingredients: 6 ounces organic green beans, 3 tablespoons walnuts, ¼ cup panko, 3 ounces diced pancetta, 1 organic lemon, 1 teaspoon arrowroot powder, 2 tablespoons unsalted butter, 1 tablespoon honey

Prep the green beans; start the pancetta topping

Heat the oven to 425°F.

  • Trim the ends from the green beans, if needed.

In a dry medium frying pan over medium heat, add the walnuts and cook, stirring occasionally, until starting to brown, 2 to 3 minutes. Stir in the panko and cook until golden brown, 1 to 2 minutes. Transfer to a bowl. 

In the same pan, over medium heat, warm 1 to 2 teaspoons oil. Add the pancetta and cook, stirring occasionally, until browned and crisp, 3 to 4 minutes. Using a slotted spoon, carefully transfer to the bowl with the walnuts and panko, toss to combine, and set aside. Wipe out the pan.

Roast the green beans

On a sheet pan, toss the green beans with 1 to 2 tablespoons oil and season generously with salt and pepper. Spread the green beans in a single layer and roast until crisp-tender and lightly browned, 10 to 12 minutes. While the beans roast, prepare the lemon glaze and finish the pancetta topping.

Prepare the lemon glaze; finish the pancetta crumble

  • Zest and juice the lemon, keeping the zest and juice separate. 
  • In another small bowl, whisk or stir together the arrowroot powder and 3 tablespoons [⅓ cup] water.

In the same pan used for the pancetta, melt the butter over medium-low heat. Add 2 tablespoons [4 TBL] lemon juice and the honey and stir to combine. Bring to a boil and whisk or stir in the arrowroot mixture. Reduce to a simmer and cook, stirring, until the liquid is slightly thickened, about 1 minute. Remove from the heat and let cool.

Serve

Arrange the green beans on a serving plate or bowl. Spoon over the lemon glaze and garnish with the pancetta-walnut crumble. Garnish with the lemon zest and black pepper and serve.
