Tomato Bisque and Gourmet Grilled Cheese

Here’s classic comfort food kicked up a few notches: a rich tomato bisque featuring tomatoes stewed with aromatics and Italian basil and a gourmet grilled cheese sandwich, perfect for dipping into the bisque or enjoying as is.

Assemble the cheese sandwiches
Allow the butter to soften, or briefly microwave in a small bowl in 5 second bursts until softened. Once softened, gently spread the butter across both sides of the slices of brioche bread. Then assemble your grilled cheese sandwiches by dividing the havarti cheese between two slices of the brioche bread, then topping the cheese with another slice of bread.

Cook the soup
Pour the tomato bisque into a saucepan. Place the saucepan onto the stovetop over medium heat, and bring to a simmer. Cook for 5 minutes, stirring occasionally, until the soup begins to simmer. Turn off the heat. Taste and adjust the seasoning as needed.

Cook the sandwiches
Meanwhile, place a large nonstick saute pan onto the stovetop, and set the heat to medium. When the pan is hot, carefully add the sandwiches. Cook for 2 to 4 minutes on the first side, or just until browned. If the pan is too hot, adjust the heat. Use a spatula to carefully flip the sandwiches. Cook for 3 to 4 more minutes, or until the toast is browned and the cheese is fully melted. Turn off the heat.

Serve
Divide the tomato bisque between serving bowls and top as desired with the basil pesto. Serve with the grilled cheese sandwiches.
