The only thing we love more than avocado toast is finding new ways to make it better! Start with delicious herb focaccia bread, then stack a smear of hummus, an egg fried to your liking, and perfectly ripe avocado (plus a pinch of Egyptian dukkah spice).

Ingredients: Eggs, Herb focaccia bun (unbleached untreated enriched wheat flour - water - olive oil - sea salt - fine herbs - yeast - malted barley flour), Avocado, Hummus (garbanzo beans - sesame tahini - sunflower oil - water - sea salt - garlic - pepper - lemon juice concentrate), Cherry tomatoes, Dukkah spice blend (toasted pumpkin seeds [pumpkin seeds - salt] - toasted sesame seeds - coriander - cumin - salt - black pepper)

Prep the ingredients

Heat the oven 425° F.

For ease and best results, we suggest using a toaster oven if possible.

  • Rinse and pat dry the tomatoes, then slice them in half.
  • Cut your avocado in half, then thinly slice.

Toast the focaccia

Line a baking sheet with aluminum foil and lightly grease. Slice the herb focaccia buns in half, then lightly oil the cut sides. Place the focaccia cut-side down on the prepared baking sheet. Place into the oven for 5 to 7 minutes, or until just toasted. Carefully remove from the oven and set aside for plating.

Cook the eggs

Meanwhile, set a nonstick saute pan on the stovetop, add 1 tablespoon of cooking oil and set the heat to medium. When the oil is hot, carefully crack your eggs into the pan and cook sunny-side-up for 3 minutes, or until they reach your desired doneness. Turn off the heat. Cover the pan with a lid until ready to assemble. We recommend cooking your eggs until the whites are opaque, but the yolks remain runny.

Serve

Spread the hummus over the cut side of the toasted focaccia, then lay the sliced avocado over the hummus. Place an egg onto each focaccia half, then top with a sprinkling of dukkah spice and a scattering of cherry tomatoes. Season to taste with salt and serve.
