Avocado Toast with Fried Egg, Dukkah Spice, and Cherry Tomatoes

Avocado toast is everyone’s favorite, but ours is over the top! Smear creamy hummus on a toasted focaccia bun, then add a fried egg, avocado slices, and pumpkin seed dukkah for a crunchy finish.
Ingredients: 2 focaccia buns, 1 organic avocado, 4 eggs, Sunbasket pumpkin seed dukkah (pumpkin seeds - sesame seeds - coriander - cumin - kosher salt - black pepper), ¼ pound hummus, ¼ pound organic cherry or grape tomatoes

Preheat the oven; line a baking sheet
- Preheat a toaster oven: 400°F conventional
- Prepare a baking sheet: Line with aluminum foil
- Rinse your produce: Gently pat dry

Prep the components
- Cut the toybox cherry tomatoes in half.
- Cut the avocado in half, discard the pit, and thinly slice the flesh.
- Separate the focaccia buns and lightly brush the cut sides with cooking oil. Place the buns cut-side down onto the lined baking sheet and into the toaster oven for 5-7 min, or until lightly toasted.
- Meanwhile, heat 1 tbsp. of cooking oil in a nonstick saute pan over medium heat. When the oil is hot, carefully crack the eggs into the pan and cook for 2-3 min, or until the whites have set and the yolks are slightly runny. If you prefer firmer yolks, cook for 1-2 more min. Turn off the heat and cover the pan until ready to assemble.

Serve
- Carefully remove the buns from the oven and transfer to serving plates. Spread each bun with the hummus, then top with avocado slices and a fried egg. Season to taste with salt, scatter the tomatoes over the toast, and garnish with the pumpkin seed dukkah.
