Prosciutto, Egg, and Romesco Breakfast Sandwich

Start your morning off right with this quick and easy breakfast sandwich. Enjoy fried eggs topped with sliced prosciutto, Swiss cheese, and our signature romesco sauce on toasted brioche buns.

Instructions

Prep the sandwich ingredients

  • Slice the brioche buns in half crosswise.
  • Separate the prosciutto slices and overlap the slices to make two even rounds.

Toast the buns

Use a toaster oven to toast the brioche buns. If a toaster oven is not available, place the buns cut-side down in a dry pan and set the heat to medium. Toast the buns in the pan for 1 to 2 minutes, or until golden-brown and warmed through.

Cook the eggs

Place a nonstick saute pan on the stovetop over medium heat and add 1 tablespoon of cooking oil. Crack the eggs into the pan and season with a pinch of salt and pepper. Cook for 2 minutes, or until the whites have set. Lay a slice of Swiss cheese over the eggs and cover the pan with a lid. Turn off the heat. Let stand for 1 to 2 minutes, or until the cheese is melted and the eggs are cooked to your liking.

Start building the sandwiches

Spread a spoonful of romesco sauce on the bottom half of each brioche bun, then place the cooked eggs on the buns.

Crisp the prosciutto; finish building the sandwiches

Return the saute pan to the stovetop and set the heat to medium-high. Place the prosciutto rounds in the pan and cook for 30 to 60 seconds on each side, or until lightly crisp. Turn off the heat. Top the cheesy eggs with the prosciutto. Spread the remainder of the romesco sauce on the top buns as desired, then top the sandwiches with the buns.

Serve

Place the sandwiches on individual plates and serve.

 

*When adding ingredients to a hot pan always be careful of any oil splatter.
