Yuca Fries with Aji Amarillo Sauce

Crispy on the outside and tender on the inside, our yuca fries are pan-fried to golden-brown perfection. Dust them with smoked paprika, then dip into a traditional aji amarillo sauce for a spicy, fruity twist.

 

Chef's Tip
Allow the cooking oil to cool completely and reserve it for another use.

Instructions

Warm the cooking oil

Place a nonstick saute pan onto the stovetop, add enough cooking oil to come 1 inch up the sides of your pan. Set the heat to medium-high and begin to heat the oil. To test that the oil is ready for frying, place the tip of a wooden chopstick or wooden cooking spoon into the oil. When the oil is hot enough, small bubbles will form around the submerged end of the chopstick or spoon.

Cook the yuca fries

Then, carefully place the yuca fries into the pan one inch apart, working in batches if necessary. Cook for 2 to 3 minutes on each side, using tongs to turn the pieces until golden-brown on all sides. Lower the heat as needed if the fries are browning too quickly. Transfer the cooked fries onto a plate lined with paper towels and immediately season with salt. Then, sprinkle as desired with the smoked paprika.

Serve

Meanwhile, place the aji amarillo sauce into a small bowl and serve as a condiment for dipping the fries.

 

*When adding ingredients to a hot pan always be careful of any oil splatter.
