Get after a gourmet brunch with this eggs bruschetta dish featuring thick, toasted slices of ciabatta topped with cherry tomatoes, avocado, and fried eggs. An herbaceous basil pesto and a tangy balsamic glaze add layers of flavor to every bite.

Ingredients: Organic avocado, Organic cherry tomatoes, Ciabatta Roll (enriched wheat flour - water - sea salt - yeast - barley malt), Eggs, Basil pesto (basil - canola oil - water - Parmesan - dehydrated garlic - salt), Balsamic glaze (cooked grape must - balsamic vinegar [wine vinegar - concentrated grape must - cooked grape must - caramel color] - Wine vinegar - Guar and Xanthan gum. Contains sulfites.)

Prep the ingredients

Heat the oven 425°F.

For ease and best results, we suggest using a toaster oven if possible.

  • Gently rinse and pat dry the fresh produce.
  • Slice the ciabatta roll into thick slabs. If desired, spread half of the basil pesto across the slices.
  • Slice the cherry tomatoes in half. Place the cherry tomatoes in a small bowl, and toss together with several spoonfuls of the pesto.
  • Slice the avocado in half. Discard the pit, and slice the flesh into segments.

Toast the ciabatta

Place the sliced ciabatta into the oven, directly onto the rack, and cook for 4 minutes, or until golden brown. Carefully remove the toast from the oven and set aside.

Cook the eggs

Meanwhile, place a nonstick saute pan onto the stovetop, add 1 tablespoon of cooking oil, and set the heat to medium. When the oil is hot, carefully crack the eggs into the pan. Cook the eggs to your desired doneness. We recommend cooking them sunny-side-up.

Assemble the bruschetta

Drizzle the remaining pesto over the toasted ciabatta slices. Top the ciabatta with the sliced avocado and the cherry tomatoes. Place the fried eggs onto the bruschetta and finish by drizzling with the balsamic glaze. Season with salt and pepper to taste.

Serve

Place the bruschetta on individual plates and serve.
