Growing up in Fiji, Henry Gosling became well acquainted with the naturally sweet and satisfying power of coconuts; he spent hours as a child scraping the white meat from the inside of the fruit. After raising his own children on the Sunshine Coast of Australia with his wife Sandra, he awoke one night with a “crazy” idea: to turn the coconut-filled memories of his childhood into yogurt as an alternative for people who, like his wife, have dietary sensitivities. And so Coyo was born.
