Arugula & Strawberry Salad with Goat Cheese

Celebrate the flavors of warmer weather! Peppery arugula and fresh strawberries are tossed in a maple vinaigrette, with walnuts and goat cheese adding a crunchy-creamy finish.
Ingredients: 3 ounces organic baby arugula or other leafy greens, ½ pound organic strawberries, 1 ounce goat cheese, 3 tablespoons pecans, Sunbasket maple-vinegar blend (red wine vinegar - maple syrup)

Make the salad
Rinse your fresh produce: Gently pat dry
- Trim off the green leafy tops from the strawberries, then thinly slice the fruit.
- In a small bowl, whisk the maple-vinegar blend with 2 tbsp. of olive oil.
- Place the arugula and strawberries into a salad bowl. Add the vinaigrette and gently toss to coat. Season to taste with salt and pepper.

Serve
- Transfer the salad to serving plates. Crumble the goat cheese over the top and garnish with the pecans.
