Smashed Cucumber Salad with Japanese Miso Tamari Dressing

Ingredients: 2 organic cucumbers, 1 organic green onion, 1 tablespoon furikake spice blend, 1 organic lime, Sunbasket pineapple-miso vinaigrette, 1 teaspoon togarashi spice blend

Prep the salad ingredients
- Thinly slice the green onion.
- Cut the lime into wedges.
- Peel the cucumbers. Slice them in half lengthwise, then roughly chop into bite-size pieces. Using the flat edge of the knife, carefully smash the cucumber pieces.

Combine the salad ingredients
In a salad bowl, combine the smashed cucumber with the green onions and miso-tamari dressing. Squeeze in as much lime juice as you like. Season to taste with salt and pepper.

Divide the cucumber salad between serving plates. Sprinkle the furikake and togarashi spice blends over the top as desired.
