Grilled Broccoli Caesar Salad

The classic Caesar salad gets a makeover with our unique version featuring grilled broccoli. Grilling the broccoli and focaccia adds beautiful char marks and savory flavor, and once tossed in our Caesar dressing with lemon zest and Parmesan cheese, you’re sure to have a new favorite. 

Ingredients: ½ pound organic broccoli, 2 tablespoons grated Parmesan, Sunbasket Caesar dressing (mayo - Parmesan - sherry vinegar - Dijon mustard - garlic - anchovy paste - kosher salt - black pepper), 1 herb focaccia bun, 1 organic lemon

Preheat the grill

  • Preheat the grill
    Set to medium & lightly grease

Make the salad

  • Separate the herb focaccia bun and lightly brush the cut sides with cooking oil. Season with salt and pepper.
  • Place the broccoli and focaccia onto the grill for 4 min, turning halfway through, or until the focaccia is toasted and browned. Transfer the focaccia to the cutting board. Continue to cook the broccoli for 2-4 more min, or until crisp-tender and lightly charred, turning occasionally.
  • Meanwhile, zest the lemon into a small bowl and mix with the Parmesan cheese. Cut the lemon in half. 
  • Dice the focaccia into bite-size pieces and place into the salad bowl. Add the grilled broccoli and toss with 1 tbsp. of lemon juice and half of the Caesar dressing. Season to taste with salt, pepper, and more dressing as desired.

Serve

  • Transfer the salad to serving plates and finish with the Parmesan and lemon zest mixture.
