Mexican-Inspired Mac ‘n’ Cheese

Mac ‘n’ cheese is always a welcome addition to the table, and we’ve added a zing to this favorite side, with pickled jalapeños and roasted red peppers. Get it while it's hot!
Ingredients: ½ pound elbow macaroni pasta, 10 ounces béchamel sauce, ¼ pound shredded cheese blend, 1 ounce cream cheese spread, ¼ pound roasted red pepper strips, 1 ounce pickled sliced jalapeños, 1 ounce Calabrian garlic confit, Sunbasket Tex-Mex seasoning blend (chili powder - onion powder - granulated garlic - sweet smoked paprika - dried Mexican oregano)

Make the mac 'n' cheese
- Boil a pot of water: Season with a large pinch of salt
- Reserve any liquid from the pickled sliced jalapeños and roasted red pepper strips. Chop the jalapeños and peppers into small pieces.
- Add the elbow macaroni to the pot of boiling water. Cook for 9-11 min, or to your desired doneness. Reserve ¼ cup of pasta water before straining.
- Pour the béchamel sauce into the empty pasta pot and place over medium heat. Taste the Tex-Mex seasoning to gauge the spice level, then add as much as you like. Bring the sauce to a simmer, then stir in the cream cheese spread and Calabrian garlic confit. Add the red peppers and jalapeños, plus the reserved liquid from both. Turn off the heat.
- Add the macaroni and Mexican cheese blend. Gently stir until the cheese is melted and the macaroni is coated in the sauce. Stir in spoonfuls of the reserved pasta water for a saucier consistency. Season to taste with salt and pepper.

Serve
- Transfer the mac ‘n’ cheese to serving bowls, or cover the pot to keep warm until ready to serve. Sprinkle any remaining Tex-Mex seasoning over each serving as desired.
