Spinach Salad with Apples, Figs, & Goat Cheese

This gourmet salad features spinach, apple, and figs tossed in a maple vinaigrette and topped with creamy goat cheese and crunchy walnuts.

Ingredients: 5 ounces organic baby spinach or other leafy greens, 1½ ounces black Mission figs, 2 ounces goat cheese, Sunbasket maple-vinegar blend (red wine vinegar - maple syrup), 1 ounce walnuts, 1 organic Fuji or other apple

Make the salad

  • Rinse your produce: Gently pat dry
  • Cut the apple in half and discard the core. Thinly slice the apple, then cut each slice into ¼-inch-thick matchsticks.
  • Cut the black Mission figs in half.
  • In a small bowl, mix the maple-vinegar blend with 2 tbsp. of olive oil. 
  • In a salad bowl, combine the spinach, apple, and figs. Drizzle with the maple vinaigrette and gently toss to combine. Season to taste with salt and pepper.

Serve

Transfer the salad to serving plates and top with the walnuts and dollops of the goat cheese.
