Southwest Cabbage and Bean Salad with Cilantro Lime Dressing

Ingredients: 4 ounces organic shredded green cabbage, ¼ cup shredded cheddar, Sunbasket cilantro-lime aioli (mayo - Greek yogurt - lime juice - cilantro - kosher salt - sugar - lime zest - granulated garlic), 4 ounces mixed corn and black beans, 2 organic scallions, Sunbasket pumpkin seed dukkah (toasted sesame seeds - coriander - cumin - kosher salt - black pepper - pepitas), ¾ ounce tortilla strips, ¼ pound organic grape or cherry tomatoes

Make the salad
- Rinse your produce: Gently pat dry
- Cut the grape tomatoes in half.
- Thinly slice the green onions.
- In a mixing bowl, toss the shredded green cabbage, corn and black beans, tomatoes, and green onions with the cilantro-lime aioli. Season to taste with salt and pepper.

Serve
- Transfer the salad to serving plates and garnish with the pumpkin seed dukkah, cheddar cheese, and tortilla strips.
