Cinnamon French Toast Casserole with Bacon & Fruit Cocktail

Treat yourself to an indulgent French toast casserole for your holiday brunch. Egg-soaked brioche, a buttery cinnamon–brown sugar blend, and a sweet pecan crumble take center stage on your plate, with crispy bacon and a fresh fruit cocktail on the side.

Ingredients: 10 ounces sliced bacon, 3 eggs, 1 cup milk, 4 slices brioche bread, ¼ pound brown sugar, 2 tablespoons cinnamon–brown sugar butter, ¼ cup pecan pieces, ¼ cup flour, 1 organic Fuji or other apple, 2 organic mandarins or other citrus, 6 ounces organic blueberries

Preheat the oven and prep the baking sheet

  • 350°F convection | 375°F conventional
  • Prepare a baking sheet: Line with aluminum foil & lightly grease

Make the French toast casserole and fruit cocktail

  • Rinse your fresh produce: Gently pat dry
  • Empty one package of cinnamon–brown sugar butter into a microwave-safe bowl and microwave for 20-30 sec, or until melted. Add two-thirds of the brown sugar and stir until combined. 
  • Spread the butter-brown sugar mixture evenly over the bottom of a baking dish. Arrange the sliced brioche bread in a single layer over the top, cutting as needed to fit.
  • Crack the eggs into a mixing bowl. Add a pinch of salt and whisk until smooth. Stir in the milk until thoroughly combined, then pour over the bread. Set aside to soak.
  • While the bread is soaking, combine the remaining cinnamon–brown sugar butter and brown sugar in a second mixing bowl. Add the flour and squish the mixture together with clean fingertips until crumbly. Mix in the pecan pieces until evenly distributed. Loosely scatter the sweet nut topping over the soaking bread. Set aside to rest for 20 min.
  • After 20 min, place the baking dish into the oven for 18-20 min (metal pan) or 24-28 min (ceramic pan), or until puffy and golden brown. A butter knife inserted into the center of the casserole should come out clean. Carefully remove from the oven. Allow to rest for 5 min before serving.
  • Once the casserole is in the oven, arrange the bacon on the prepared baking sheet and place into the oven onto an empty oven rack. Cook the bacon alongside the casserole for 12-15 min, or until crisp and cooked to your liking. Carefully remove from the oven.
  • While the casserole and bacon are in the oven, peel the mandarin oranges and separate the segments. Cut the apple into bite-size pieces, discarding the core. Add the mandarins and apple to a third mixing bowl and toss with the blueberries.

Serve

  • Cut the French toast breakfast casserole into pieces and transfer to serving plates. Serve the bacon and fruit cocktail on the side.
