Citrus-Fennel Salad with Honey-Lime Vinaigrette

In this gourmet salad, arugula, frisée lettuce, and shaved fennel are tossed with sweet, tangy oranges in a honey-lime vinaigrette. Fresh mint and toasted almonds are a refreshing finish.
Ingredients: 1 organic cara cara or other orange, 1 organic blood or other orange, 1 organic navel or other orange, 1 organic fennel bulb, 3 ounces baby arugula or other leafy greens, 1 head organic frisée or other chicory lettuce, Sunbasket honey-lime vinaigrette base (lime juice - onion - honey - Aleppo chile flakes), 4 or 5 sprigs organic fresh mint, 1 ounce toasted almonds, 1 or 2 organic shallots

Make the salad
- Peel the oranges. Cut off the ends from each orange and squeeze those into a small bowl. Cut the remaining fruit into ½-inch-thick slices, discarding any seeds. Transfer the orange slices to a salad bowl.
- Peel the shallot and trim the ends. Thinly slice the shallot crosswise and add to the small bowl. Season lightly with salt, then toss with the orange juice. Let marinate for a few minutes.
- Meanwhile, trim off the bottom root and top stalks from the fennel, then thinly slice the bulb crosswise.
- Pour the shallot and orange juice into the salad bowl. Add the fennel, toss gently with the orange slices, and let marinate for a few more minutes.
- Meanwhile, in the small bowl used for the shallot, mix the honey-lime vinaigrette base with 1-2 tbsp. of olive oil.
- Trim off the base from the frisée and separate the leaves.
- Tear the mint leaves into small pieces.
- Add the arugula, frisée, and mint to the salad bowl. Drizzle with the vinaigrette and gently toss to combine. Season to taste with salt and pepper.

Serve
- Transfer the salad to serving plates and garnish with the toasted almonds.
