Curried Cauliflower Crunch Salad with Almonds & Grapes

Curry flavors are a welcome addition to any salad, bringing depth and spice. Toss raw cauliflower florets and sweet grapes in a curried lemon aioli, then add almonds for a nutty finish.
Ingredients: ½ head organic cauliflower, 1 organic lime, 1 teaspoon curry powder, 3 tablespoons toasted almonds, 3 ounces organic red or other grapes, 3 organic scallions, Sunbasket lemon aioli (mayo - lemon juice - garlic), 4 or 5 sprigs organic fresh dill

Make the salad
- Rinse your produce: Gently pat dry
- Trim off the cauliflower stem and cut the florets into bite-size pieces.
- Cut the red seedless grapes in half.
- Roughly chop the dill fronds, discarding any large stems.
- Thinly slice the green onions.
- Roughly chop the toasted almonds.
- Zest the lime into a mixing bowl. Cut the lime in half and squeeze the juice in with the zest.
- Add the lemon aioli, curry powder, and a pinch of the dill to the lime zest and juice and stir until well combined. Add the cauliflower florets and grapes and gently toss to coat with the dressing. Season to taste with salt and pepper.

Serve
- Transfer the salad to serving plates and garnish with the green onions, almonds, and as much of the remaining dill as you like.
