Grilled Asparagus with Lemon-Garlic Herb Butter

Bring a bright, buttery balance to your summer spread with grilled asparagus. Lightly charred spears are tossed in lemon-garlic herb butter with fresh zest and juice, then finished with Italian cheese for a savory, tangy bite.
Ingredients: 1 pound organic asparagus, ¼ cup lemon-garlic herb butter, 1 organic lemon, 2 ounces Italian cheese blend

Preheat the grill; line a baking sheet
- Preheat the grill: Set to medium & lightly grease
- Prepare a baking sheet: Line with aluminum foil

Make the asparagus
- Cut off the woody asparagus bottoms.
- Zest the lemon, then cut it into wedges.
- Grill the asparagus over direct heat, uncovered, for 5-7 min, or until bright green and tender, turning occasionally to lightly char on all sides.
- Meanwhile, empty the lemon-garlic herb butter into a small bowl. Cover with a damp paper towel and microwave in 10-sec increments until melted. Stir in the lemon zest and half of the lemon juice (or more as desired) until well combined.
- Transfer the grilled asparagus to the lined baking sheet and drizzle with the lemon-garlic herb butter. Season to taste with salt and pepper and toss until well coated.

- Transfer the asparagus to serving plates and garnish with the Italian cheese blend.
