Grilled Elote-Style Corn on the Cob

Turn up the flavor on classic grilled corn with this elote-inspired favorite. Sweet, charred corn gets slathered in zesty chile-lime butter and cool sour cream, then finished with crumbly cotija and fresh cilantro for a bold, creamy-crunchy bite. 

Ingredients: 4 ears organic yellow corn, 2 tablespoons chile-lime butter, 2 ounces grated cotija cheese, 2 tablespoons sour cream, 4 or 5 sprigs organic fresh cilantro

Preheat the grill; line a baking sheet

  • Preheat the grill: Set to medium & lightly grease
  • Prepare a baking sheet: Line with aluminum foil

Prepare the corn

  • Shuck and clean the corn as needed.
  • Roughly chop the cilantro leaves and finely chop the stems.
  • When the grill has reached a temperature of 350°F, place the corn over indirect heat. Close the lid and cook for 13-16 min, turning the ears every few minutes to ensure all kernels are evenly cooked.
  • Transfer the corn to the lined baking sheet. Slather the chile-lime butter and sour cream all over, then sprinkle with the cotija cheese.

Serve

  • Transfer to serving plates and garnish with the cilantro.
