Hold onto summer with our caprese tomato salad. Layer slices of fresh tomatoes and creamy mozzarella over our herbaceous basil-Parmesan pistou for a colorful presentation, then top with pine nuts, fresh basil, and a balsamic glaze for a gourmet finish.
Ingredients: 2 organic beefsteak or other tomatoes, ΒΌ pound fresh mozzarella, Sunbasket pistou (extra virgin olive oil - basil - Parmesan - garlic), 2 tablespoons pine nuts, 1 tablespoon balsamic glaze, 4 or 5 sprigs organic fresh basil

Prep the salad
- Rinse your produce: Gently pat dry
- Slice the tomatoes into ¼-inch-thick rounds.
- Cut the fresh mozzarella cheese into even slices.
- Pick the basil leaves from the stems. Stack the leaves, then slice into thin strips.

Serve
- Spread a large spoonful of the basil-Parmesan pistou onto serving plates. Layer with the tomato and mozzarella slices and season to taste with salt and pepper. Garnish with the basil and pine nuts, then drizzle with the balsamic glaze and the remaining pistou.
