Prosciutto, Egg, and Romesco Breakfast Sandwich

Start your morning off right with this quick and easy breakfast sandwich featuring a fried egg, sliced prosciutto, Swiss cheese, and our signature romesco sauce on a toasted brioche bun.

Ingredients: 2 eggs, 3 ounces sliced prosciutto, Sunbasket romesco (roasted red peppers - almonds - extra virgin olive oil - sherry vinegar - garlic - sweet smoked paprika - kosher salt), 2 brioche buns, 2 slices Swiss

Make the sandwiches

  • Heat 1 tbsp. of cooking oil in a nonstick saute pan over medium heat. When the oil is hot, carefully crack the eggs into the pan and season with salt and pepper. Cook for 2-3 min, or until the whites have just set and the yolks are slightly runny. Place a slice of Swiss cheese over each egg, then cover the pan and turn off the heat. Let stand for 1-2 min, or until the cheese is melted and the eggs are cooked to your liking. 
  • While the eggs are cooking, separate the brioche buns and toast in a toaster oven. 
  • Transfer the toasted buns to serving plates. Spread a spoonful of the romesco sauce across each bottom bun, then top with a cooked egg.
  • Place the saute pan over medium-high heat. When the pan is hot, gently pull apart the prosciutto slices and carefully add to the pan. Cook for 30-60 sec on each side, or until starting to crisp. Turn off the heat.

Serve

  • Top each egg with one-quarter of the prosciutto, adding more if desired. Drizzle the remaining romesco sauce over the prosciutto and finish with the top buns.
