Yuca Fries with Aji Amarillo Sauce

Crispy on the outside and tender on the inside, our yuca fries are golden-brown perfection. Dust them with smoked paprika, then dip into a traditional aji amarillo sauce for a spicy, fruity twist.
Ingredients: ½ pound yuca fries, Sunbasket aji amarillo (mayo - lime juice - ketchup - shallot-garlic confit - scallions - cilantro - aji amarillo spice), 1 tablespoon smoked paprika

Line a plate
- Prepare a plate: Line with paper towels

Make the fries
- Pour ¼ inch of cooking oil into a nonstick saute pan and set over medium-high heat. When the oil is hot, carefully add the yuca fries, working in batches if needed. Cook for 2-3 min on each side, or until golden brown and crisp, reducing the heat if the fries are browning too quickly. Turn off the heat.
- Transfer the fries to the lined plate. Immediately season with salt and as much smoked paprika as you like.

Serve
Transfer the fries to serving plates and serve with the aji amarillo sauce for dipping.
