Summer Corn, Tomato, and Mozzarella Salad

With sweet corn, juicy grape tomatoes, creamy mozzarella cheese, and fresh basil, this delicious salad has all the colors and aromas of summer.
Ingredients: 1 ear organic corn, ΒΌ pound organic grape or cherry tomatoes, 4 ounces fresh mozzarella, 4 or 5 sprigs organic fresh basil, Sunbasket sherry vinaigrette (extra virgin olive oil - sherry vinegar - whole grain mustard - honey - kosher salt - black pepper)

Wash all produce before use (except prewashed greens).

Make the salad
- Carefully shave off the fresh kernels from the yellow corn.
- Cut the grape tomatoes in half.
- Tear apart or cut the fresh mozzarella into bite-size pieces.
- Pick the basil leaves from the stems and gently tear into pieces.
- In a salad bowl, toss the corn, tomatoes, mozzarella, and basil with the sherry vinaigrette. Season to taste with salt and pepper.

Transfer the salad to serving plates.
