Paleo cinnamon-ginger flax cereal

  • ½ cup flaxseed meal
  • ½ cup hemp seeds
  • ¼ cup psyllium seed husks
  • 2 tablespoons cinnamon
  • 2½ cups almond milk
  • 2 tablespoons coconut oil
  • 1 teaspoon coconut sugar
  • 2 teaspoons maple syrup

Make the batter

Heat the oven to 300°F.
Line a sheet pan with parchment paper.
In a food processor, combine the flaxseed meal, hemp seeds, psyllium seed husks and 1½ tablespoons of the cinnamon. Pulse until combined.
Add half the milk and the coconut oil, and process until combined and almost smooth.


Bake the cereal

  • In a bowl, combine the remaining cinnamon and the sugar.
Spread the batter out on the parchment-lined sheet pan into a thin layer. Bake until the batter is just set, 12 to 15 minutes. Remove from the oven and cut into 2 inch squares. Brush the squares with the maple syrup and sprinkle with the cinnamon and sugar mixture.
Lower the oven heat to 250°F, return the pan to the oven, and bake the squares until golden brown, 12 to 14 minutes. Transfer the squares to a cooling rack and cool completely until crisp, 20 to 25 minutes



Transfer to bowls and serve with the remaining almond milk. Top with fresh fruit, if you’d like.
