The diversity of colors, textures, and flavors make mushrooms one of the most interesting ingredients in your Sun Basket

A popular choice among vegetarians, who crave their meaty texture, and carnivores, who like their meaty flavor, mushrooms are a favorite of Sun Basket’s dietitians and cooks. According to our dietitians, mushrooms are fat-free, low calorie, and full of vitamins (they’re one of the only foods that naturally produces vitamin D!) and antioxidants. Our cooks love their flavor and versatility for dishes—stir-fries, soups, pastas, and salads—from every culture.

Fun Fact: The Mycena genus of mushrooms includes several dozen types of mushrooms that produce light by a chemical reaction called bioluminescence, which means that they glow in the dark. Throughout history, travelers would illuminate their way through the woods using these glowing ‘shrooms as a guide.

Chef’s Tip: Most mushrooms don’t need as thorough a wash as other vegetables. If you spot flecks of dirt, simply wipe the tops of the mushrooms with a damp paper towel. With meaty mushrooms like portobellos, remove the stems and, using a spoon, gently scrape the black gills from the undersides of the caps.

The Key to Optimal Health is Eating Better Food, Not Less

For years, conventional wisdom has held that to lose weight we need to consume fewer calories than we burn. But a new study led by the director of nutrition studies at the Stanford Prevention Research Center and published in JAMA has turned that idea on its head, showing that it’s the quality of the food, not the quantity that matters most. 

The researchers followed a group of 609 adults for one year. Half the group was assigned a healthy low-fat diet while the other half was put on a healthy low-carb diet. The only instruction the two groups received was to opt for nutrient-rich foods in their most natural state. In classes with dietitians, the participants were taught to avoid processed foods high in sugars, refined oils, excess sodium, artificial additives, and preservatives. Everyone was encouraged to work out, but in general, they did not increase their levels of exercise. Most importantly, there were no instructions to restrict calories or portion sizes in any way. Instead, the subjects of the study were told to eat as much as they needed to avoid feeling hungry. After 12 months, there was a wide range of results in both groups. Some people lost as much as 60 pounds while others gained weight, but overall there was an average loss of about 13 pounds between the two groups. Both groups saw reductions in body fat, blood sugar, and blood pressure. 

Sound familiar? Sun Basket’s Director of Nutrition, Lindsey Kane has been pushing the same advice since she joined our team. It’s not that calories don’t matter, they do. But this research showed that participants were able to satisfy their hunger with nutritious foods that are naturally lower in calories than processed, low-nutrient foods. By adopting an attitude of abundance and focusing on higher quality ingredients instead of ones with fewer calories, they were able to satisfy their hunger and feel good about their meals, rather than experiencing the deprivation associated with most diets. 

Along with changes in what they ate, participants also reported changes in how they ate. Cooking more of their own meals, turning off the television, and sitting down to eat with their families, instead of eating on the run. 

The truth is, eating for optimal health and weight management isn’t complicated. While there’s lots of controversy among health experts about the best approach to weight management, if you step back you’ll see that among millions of scientific theories and research studies, there’s a common denominator: A high-quality diet of nutrient-rich whole foods leads to better health outcomes and a lower risk of disease.  

As long as you eat wholesome foods most of the time, there’s little need to worry about how many calories you’re taking in. It’s hard to overdo it with a meal of fresh salmon and asparagus, with a bowl of berries and yogurt for dessert. Refuse to swing with the research pendulum that declares one food is good and another is bad. Instead, cook real food for yourself and family, gather at the table, laugh out loud, and enjoy your meals. At the end of the day, that’s all the nutrition advice you really need.

Meet Lindsey Kane: The Anti-Diet Dietitian

We caught up with Registered Dietitian and health and wellness guru, Lindsey Kane, about what she loves to eat, why she hates diets and wants you to stop reading nutrition labels.

Have you always been interested in nutrition, or did you have a healthy eating epiphany at some point along the way?

Meals were the centerpiece of every family gathering when I was growing up, and I’ve always associated food with fun. I started packing my lunch when I was in elementary school to ensure I was never disappointed with my mom’s well-intentioned, but just-not-cutting-it, PBJ. That got me playing in the kitchen and building my culinary muscles. I loved the independence and autonomy cooking gave me. Flash forward to middle school when I started playing field hockey, basketball, and lacrosse. That’s when I started to notice how what I ate could make or break my performance on the field, and sparked my interest in not just eating, but eating with nutrition in mind. I went to college to study pre-med, but after one week of Nutrition 101 I changed my major to nutritional sciences, and never looked back.

Do you follow any particular diet? 

There’s no label that accurately defines how I eat. The diet I follow is just that: my diet. If there’s one label I’ll allow, it’s qualitarian, because whatever shape my diet takes, one thing remains constant: high-quality, nutrient-rich foods that I know make me feel great and that I enjoy eating. My only rule is that food has to taste good. You only get so many meals on this earth, so there’s no time to eat things you don’t enjoy. Food can be equally delicious and nutritious.

How has your diet evolved over the years? 

I used to feel like I had to set an example with my meals—after all, I’m a dietitian. But I realized that trying to be the picture-perfect dietitian perpetuates the myth that in order to be healthy, you have to follow a strict diet. I like cookies and nachos just like everyone else, and I have a busy schedule, with only 24 hours in the day. I like to live at the intersection of health and happiness, and rather than trying to exemplify the perfect diet, I am all about keeping it real, approachable, practical, and enjoyable. Healthy habits are the basis of my daily routines, but I also eat chocolate and sometimes I drink too many glasses of wine. But as l like to say, what you do every day is more important than what you do every once in a while.

I’m sure this is the one question everyone asks, but here it goes: What does a dietitian eat? 

Breakfast is usually something quick and easy: plain Greek yogurt, with cinnamon and vanilla topped with berries and chopped walnuts or almonds, or overnight oats with berries, cinnamon, vanilla, chopped nuts, and toasted coconut. I pack breakfast the night before to keep my mornings easy. Not to sound like an infomercial, but I eat a lot of Sunbasket meals. I get two (or sometimes even three) servings out of each meal, so I have them for both lunch and dinner. I’ll choose at least one salad, and look for other meals that pack well for leftovers. I cook my meals on Monday night and pack them in individual containers so that I can just grab them on my way to work.

What’s the most important thing for someone trying to adopt a healthy diet? 

People get excited about complex diets that involve fasting and dramatic eliminations of entire food groups, thinking that they might be the magic formula for their health goals. But I find that too often these people are ignoring the fundamentals of healthy living. Before adopting complex dieting strategies, cover the basics first: Are you drinking enough water? Getting quality sleep? Eating plenty of fresh fruits and vegetables every day? Managing your stress? Taking time for relationships? Focus on these simple things first, then come talk to me about these fancy strategies. More often than not, if you master the basics, everything else is irrelevant.

You were recruited to play lacrosse in college. What kind of workout do you do now?  

Once an athlete, always an athlete. I’m still very competitive. I love feeling the progress of getting faster, stronger, and better at something. I am completely reliant on the rush of feel-good endorphins and the burst of energy I get from a workout. I don’t work out to burn calories, I do it because I love the way it makes me feel, and for all the other benefits that come with regular exercise. I’m currently training for the Honolulu Olympic Triathlon in May, so I’ve been running, biking, and swimming, as well as doing HIIT workouts and boot camps, plus plenty of recovery days that involve stretching, foam rolling, and yoga.

You’ve written a lot about the importance of sleep. What’s your bedtime routine? 

I attribute my winning mornings to my well-oiled nighttime routine: I set a go-to-bed alarm to go off eight hours before my wake-up alarm so that I know I’m getting a full night’s rest. I use the app f.lux to kill the bright light on my screens which helps immensely for nights when I have to work late. Otherwise, I try to ditch all the screens around 10 p.m. and finish the day with a book or a podcast. I like to mix a drop of lemon oil with my nighttime face cream because vitamin C is a magic-maker for healthy, radiant skin. I also started diffusing lavender and frankincense at night, and I’ve never slept better.

You’re a nutrition expert who doesn’t like nutrition labels. What’s up with that? 

My beef with the numbers on nutrition labels is that the metrics reflect what we’ve been brainwashed to care about: low calories, high protein, high fiber, … la la la … while saying nothing about the quality of the food or what’s IN it. I prefer to go straight to what really matters: the ingredient list. A good general rule is: If there’s anything on the list that I can’t find at the grocery store, it’s likely not something I want to eat.

Ajil: Persian Trail Mix

Shopping List
1½ cups mixed roasted nuts and seeds (pumpkin seeds, pistachios, cashews, hazelnuts, whole and slivered almonds)
1½ cups mixed dried fruits (barberries, golden raisins, mulberries, goji berries, chopped apricots)
10 to 15 dried Mission figs, cut in half lengthwise
1/3 cup dried and salted chickpeas, optional

Instructions

1 Make the trail mix
In a bowl, combine the nuts, fruit, figs, and chickpeas, if using. Mix well.

2 Serve
Serve at once, or store in an airtight container for up to 3 weeks.

Dining at the Persian New Year Table

By the time March rolls around, it can seem like winter may never end, but then comes the Persian New Year celebration Nowruz, which begins at the exact moment of the spring equinox—when the sun crosses the equator going from south to north. The holiday arrives just when we need a sign that spring really is coming.

Celebrated by Iranians around the world (Iranian refers to nationality and Persian to ethnicity, but many Iranian Americans use the terms interchangeably), the festivities span 13 days and include family visits and feasting. Nowruz means “new day” in Farsi, and the season is welcomed with a generous spread of traditional foods meant to bring good fortune. Persians set what they call the haft-seen table, with seven items that start with the letter s. According to Harvard’s Center for Middle Eastern Studies, these dishes represent what people hope to bring into the new year. Sabzeh are sprouts to symbolize rebirth; samanu is a sweet pudding made with wheat, for abundance and fertility; serkeh, or vinegar, is for wisdom and patience; seer is garlic, meant to bring good health; senjed are dried fruits, for love; seeb are apples, for beauty; and somaq are sumac berries that symbolize the colors of dawn. 

Over the two-week celebration, Persians eat dishes like kuku sabzi, a frittata-like egg dish made with fresh herbs, with the eggs representing fertility. It’s a dish so brilliantly green it looks like spring on a plate. They’ll eat bowls of ash reshteh, a noodle soup to symbolize the unraveling of troubles in the coming year, snack on ajil, a sort of Persian trail mix of nuts with raisins and other dried fruits, and sweeten their table with sholeh zard, a saffron-hued rice pudding.

To end the 13-day celebration, Persians finish Nowruz with Sizdah Bedar, an outdoor picnic, because there’s no better place to welcome spring than in nature.
